Will clear conversion slow down or stop cherry from darkening?

Nothing will stop it. Waterborne will slow it down but not stop it completely. There is no way to stop it in my experience other than an exterior rated waterborne finish with a lot of UV blocking but its still going to darken.

I'm not sure about cherry, but about 7 years ago I built a kitchen island for our weekend cabin using Eastern Redcedar / Juniperus virginiana from the old someplace of old friends. Knowing this wood was really too soft for the counter top, I intended to fortify the top by using Smiths CEPS. I had heated the wood by making a tent with a tarp with a space heater blowing in under it. The plan was to have the cooling air within the wood contracting to draw this thin epoxy in further. Not only did it make it about as hard as plastic lam, the top kept the deep red, reddish purple, and gold that can be expected in freshly cut cedar. All the legs and drawer fronts have turned tobacco brown.

Total lack of sunlight will be the only thing that slows cherry from changing color.

We have an inventory of sample doors that we make. We keep them wrapped in the green paper that we use for taping off areas before spraying. I have been amazed by how dark the cherry samples have become over the years. Some of the door samples are over 15 years old and are only brought out in the light when showing them to a customer. I know the wood will darken with age even in the dark but will absolutely darken quicker in open light (direct or indirect sun light and even normal house lighting) . Cherry will darken regardless of the finish, unless it is painted. (but who would paint cherry?)

Tan lines on cherry is one of those mistakes you hope to never make again. Most people have ended up remaking or planing down some cherry that was partially tanned by the sun. We always keep it away from the windows and keep it covered when its near them.

The tanning typically goes deep enough that it can't be hand/RO sand off. It's got to be planed or thickness sanded.

I'm sure cherry has cost many people alot of money.

The simple answer to can I prevent cherry from darkening is no. It will continue to darken even in a dark hallway.

It's one of my favourite woods. I like the smell, how it works, and the color.

Off topic just a little...Cherry is the best wood for smoking meat....we love doing cherry jobs just so we can restock our smoking wood pile.
