Food safe resins & epoxy's

I recently got into the chopping board game and, I'm looking for some recommendations on professional food safe resins and appropriate oils and finishes.
Any and all suggestions and first hand tips are greatly appreciated.

All finishes, once cured, are inert. Harmless. Same with glues.
Renewable finishes are preferred, with mineral oil being the major ingredient.

A professional getting into cutting boards? Every hobby woodworking guy in the nation is making cutting boards and of course for the higher end folks, charcuterie boards. The finish depends on if the user will really use it for cutting, serving, or just hanging on the wall because it is too pretty. For real cutting boards I would use walnut or raw flax oil.

@DaveSochar is correct. All epoxy resin products are completely food safe once cured.

They say they are inert, but I’d pay to see someone eat some of the dried epoxy in the bottom of the mixing container!
