It is very smooth. I am not sure waht you are talking about. It was finish sanded with 220grit. has a very smooth topcoat of poly.
Great timber, great idea, well made, and I can see it's smooth in the sense that you've sanded it, but I'm afraid my personal choice would have not been to have such a high gloss finish. But, like I say that's my opinion.
What type of poly did you use ? It does not look yellow. When I tested just water-based poly, the grain was not popping enough.
I used Minwax fast drying Polyurethane, Clear Gloss, it is oil based.
